Americas: Hilton's Room Service Replacement, Three Years On

Herb N' Kitchen, the grab-and-go outlet at the Hilton New York Midtown

It’s been three years since the Hilton New York Midtown closed down room service and opened up Herb N’ Kitchen, a grab-and-go store/cafeteria/restaurant with both packaged and freshly made food that guests can eat in or order up to their rooms. It doesn’t come wheeled in on a tray, though. It comes in a paper bag.

Three years on, the controversial plan is clearly a success. Hilton correctly spotted that the fast casual trend would only continue to grow as hotel public spaces become more popular than ever and travelers prefer this kind of economical option for their breakfast, lunch, and snacks. Herb N’ Kitchen serves packaged meals as well as made-to-order brick-oven pizza and sandwiches, plus a variety of local and specialty snacks, pastries, and drinks.
